Nixed the gym and took a 2 mile walk with my sweetie instead.

I made my grandma's lemon coconut cookies for the first time in ages...they are sooooo addictive!

1 box lemon cake mix
1 box vanilla pudding
1/2c oil
1/2c coconut
1/2c nuts (optional)
3T water

Mix and place teaspoonfuls on greased cookie sheet, bake at 350°F for 11 minutes or so.

Alternately you can use white/yellow cake mix and lemon pudding, it doesn't matter.

They are soft, not overly sweet, and you can make little quarter-sized cookies, too.
